History

Potato croquettes, also known as crocchè di patate in Italian, are a popular appetizer or snack in many countries. They are made with mashed potatoes, breaded and fried until crispy on the outside and soft on the inside.

Ingredients

2 lbs potatoes, peeled and diced
1/2 cup grated Parmesan cheese
2 eggs, beaten
1/4 cup chopped parsley
1/2 cup breadcrumbs
Salt and pepper to taste
Vegetable oil for frying
